RECIPE: Cocktail Club Sandwiches

The perfect accompaniment for cocktails. Easy to make, perfect to keep in the freezer until needed.


2 Thin Sliced Wholemeal (or brown) Loaf of Bread

2 Thin Sliced White Loaf of Bread

1 Jar Gherkin Spread

1 Container Cream Cheese

Small Liverwurst

1 Medium Sized Red Onion, diced thinly

300 gms Thinly Sliced Ham

Small Container of Dijon or Sweet Mustard



Place all of one loaf of sliced wholemeal bread on clean bench space

Spread each slice with gherkin spread and then cream cheese

Place a slice of white bread on top of the wholemeal bread. Spread liverwurst on bread followed by diced red onion.

Place a slice of wholemeal bread on top and spread mustard on the bread and then top with the ham.

Place a slice of white bread on top. The whole club dsandwich is complete.

Stack three complete sandwiches on top of each other and slice the crusts off the four sides. Slice the sandwich stack into thirds,one way and then thirds the other way. This will give you nine cocktail sandwiches per sandwich.

Spread the cocktail sandwiches onto a platter in a circular shape. Sprinkle with finely chopped parsley prior to serving.

To store for future use, wrap each stack of cocktail sandwiches in plastic wrap. Place in a freezer bag and store in the freezer for no longer than two months.
