Baked Chicken with Chilli, Coriander and Feta

A recipe that I must share cooked by my son James this evening for dinner. He wasn’t able to give me precise measurements, he just made them up as he went along, however the flavors, mixed together were fantastic. I hope you enjoy it, as we did.

This “recipe” was made for 4 people, although I believe the men at the table could have eaten at least another 2 fillets each.



4 Chicken Breast Fillets

10 Birds Eye Red Chillis, seeded, finely chopped

Bunch Coriander, finely chopped

1 block of Feta Cheese, chopped (100-200gms?)

1 Cup Bread Crumbs


Cut a pocket into each chicken fillet

Mix all ingredients together and stuff each chicken fillet.

Wrap each fillet individually in foil and bake in a hot oven for 20-30 minutes.

Serve immediately with salad and crunchy bread.
