This recipe is a fantastic opportunity to take the stress out of a dinner party and ease into it, whilst enjoying a fun treat.

Ingredients (serves 4)
5 Sheets Filo Pastry
3 Tbsp Melted Butter
3 Tbsp Virgin Olive Oil
2 Tbsp Fresh Lemon Juice
2 Tbsp Vodka
2 Tsp Worcestershire Sauce
½ Tsp Cayenne Pepper
250Gms Thinly Sliced Salmon (coarsely chopped)
3 Tbsp Diced Spanish Onion1Tbsp Capers
1 Cup Fresh Dill (Chopped)
1 Radicchio, Leaves Separated

Method
Preheat oven to 180 Degrees. Coat 4 medium sized ramekins or 4 large muffin cups with cooking spray or melted butter.
Brush each sheet of filo with the melted butter and stack one on top of the other. Cut filo layers into 4 equal squares and place each stack into a ramekin or muffin cup. Bake for 15 minutes or until edges are golden and pastry is crisp throughout. Remove from oven and place on rack to cool.
In a small bowl, combine olive oil, lemon juice, vodka, Worcestershire sauce and cayenne pepper. Set aside. In a medium bowl, combine salmon, onion and capers. Add olive oil mixture and dill and toss to combine.
Remove filo cups from ramekins and line each with a radicchio leaf. Fill cups with salmon mixture and serve.
