Ingredients (serves 4)
1½ kg large octopus, cleaned
1 large Spanish onion, cut in wedges
1½ cups olive oil
1½ cups red wine
Cut octopus into 3 inch pieces
Place in a saucepan with remaining ingredients
Slowly bring to the boil, reduce heat and simmer (partially covered) for approximately
1-1½ hours or until octopus is tender.
Serve as an entree with garlic or herbed bread.
