RECIPE: Great Guacamole

The amazing thing about Guacamole is the number of options it provides you. It’s great with tortilla’s or nacho’s and pretty much any Mexican food, or even salmon on toast for example. This is my own take on a classic recipe that I hope you enjoy.

Ingredients

2 Large Ripe Avocados

1 Medium Red Onion (finely diced)

1 Cup Flat Leaf Parsley (finely diced)

3 Small Red Chilis (finely diced without seeds)

1 Cup Sour Cream

Juice of 2 Limes

1 Tblsp Sambal Oelek (if not available use Tabasco Sauce)

2 Tbslp Finely Grated Parmesan Cheese

Freshly Ground Pepper and Rock Salt

Method

Mash avocados with a fork, until smooth.

Stir in lime juice (this stops avocado turning brown, and adds a citrus flavour)

Add diced onion, chilies and parsley, stir until combined

Add sour cream, sambal oelek, cheese and salt and pepper. Stir thoroughly.

Taste test and add additional ingredients, depending on your personal taste in flavours.

Serve as a dip with crackers, or spread on smoked salmon, served on fresh bread! Yum

  3. I hope you and your friends enjoy this. We love it. You may also be interested in the latest recipe coming out today, Egg Caviar Dip – one I always used for large functions – such as school events. If the event was small – the leftovers were very moorish – it is fantastic and very easy. Only limited by your creative schools in decorating!
