Ingredients (serves 4)
Cut the ends off and remove the string from the snow peas. Heat oil in large saucepan and cook onions until they are soft. Add snow peas, potato and stock. Bring to the boil, then reduce heat, cover and simmer for 10 minutes or until snow peas are soft.
Remove from heat and cool. Blend with a stab blender. Return to the stove and bring the boil. Remove from heat and add coriander and yoghurt. Store in the fridge until ready to eat.
