RECIPE: Gin Burgers with Cognac and Tomato Sauce

Tasty gin beef burgers with a yummy cognac tomato sauce enables a real Sunday barbeque with a difference – food and drink all-in-one.

Ingredients:

Gin Burgers (makes eight)

1.5Kg Premium Beef Mince

1 Onion, finely diced

2 Cloves Garlic

½ Cup Breadcrumbs

2 Eggs

3 Tbsp Gin

2 Tsp Sesame Oil

2 Tsp Salt

2 Tsp Ground Pepper

8 Hamburger Buns or Foccacia Bread Rolls

Cognac Tomato Sauce – makes 1 ¼ Cups

½ Cup Tomato Sauce

½ Cup Chilli Sauce

¼ Cup Courvoisier

2 Tbsp Butter
1 Tbsp Balsamic Vinegar

¼ Tsp Ground Cumin

Pinch Cayenne Pepper

¼ Tsp Allspice

Dash Tabasco

METHOD – Burgers

1. Combine mince, onion, garlic and breadcrumbs in a large bowl. In a separate bowl, lightly whisk eggs with gin, sesame oil, sold and pepper. Foild egg mixture into beef and mix until just combined – over mixing will make tough burgers. Divide mixture into 8 burger patties.

2. Preheat barbecue grill to high.

3. Place burgers over flame and cook for 6 to 8 minutes per side or until juices run clear. Serve on toasted buns or focaccia bread with Tomato Sauce and all your favourite burger toppings – lettuce, tomato, beetroot, cheese?

METHOD – Sauce

1. Combine tomato sauce, chilli sauce, Courvoisier, butter, vinegar, cumin, cayenne, allspice and Tabasco sauce in a small saucepan over low heat and simmer for about 15 minutes, stirring regularly. Refrigerate until cool before serving. Will keep in the fridge for up to a month.
