RECIPE: Chilled Summer Soup

One of my favourite meals that I take to the beach on a hot summers day. Very refreshing, this soup is also very simple to make!!

Ingredients (serves 4)
350g Snow Peas
1 Onion, finely diced
1 Potato, chopped
1 Tbspn Olive Oil
1 Litre Chicken Stock
2 Tbspn chopped fresh Coriander
2 Tbspn low fat Yoghurt
